View Full Version : Low cal tasty food ideas
lyndix 06-07-2008, 11:38 AM After stopping smoking I have put on weight and have gone up 2 dress sizes to a 14.
Started a diet 3 weeks ago and have already started losing weight(about 6lbs) but am getting bored with what I`m eating.
I have cut out sugar, white bread, full fat milk, fried stuff, all the usual naughties and don`t eat after 7pm.
I`m after some tasty low cal food ideas to keep me on the straight and narrow.

My OH has a great recipe for spinach and butternut squash curry that is fat free and massively low in calories

pepperonata is a sort of thick pepper sauce/stew. heres the recipe
INGREDIENTS
equal amounts of red and yellow peppers (don't use green they lose their colour and go a bit slimy)
1 large onion
a few cherry tomatoes
1/3rd of a standard chilli pepper
3/4s pint of chicken/veggie stock
saffron
rosemary
garlic
olive oil
pepper
sea salt
METHOD
finely chop the onion, rosemary and garlic
deseed the chilli pepper and very finely chop
slice the peppers into even strips
halve the cherry's and using your finger scoop out the water and seeds and roughly chop
heat some olive oil (about a tablespoon) gently in a pan and add the onion, sweat the onion until it releases its juices
add the garlic, rosemary and saffron, season and continue to cook gently for a minute
add the peppers and stir well coating the peppers in the onion mix
add the chilli, tomatoes and stock
at this point give it a taste, it won't taste of too much but you'll get the idea
bubble for at least an hour, uncovered and reduce the stock away. once you're left with a sort of thick chunky sauce stew, turn off the heat and leave it for at least an hour before you serve it.
its actually even better if you leave it overnight

330g = 1.5 points
220g = 1 point
110g = ½ point
Ingredients
1tsp olive oil
Small onion, diced
Clove of garlic
1 red pepper, diced
Large handful mushrooms, diced
1 large tin tomatoes
200ml veggie stock
1 tablespoon tomato puree
100g dried split red lentils
Salt and pepper
Oregano or basil
2 courgettes, diced
Method
1) Make sure all vegetables are diced and chunky.
2) Fry onions and garlic in oil for a few minutes
3) Add peppers and mush and fry lightly
4) Add carrots, tomatoes, stock, tomato puree, lentils, herbs and seasoning. Simmer for 30-40mins
5) Add courgette and cook for 10minutes more.

Points value 2.5 points – serves 4
Ingredients
200g green and brown lentil
125g dried rice (brown)
2 medium carrots (say to grate but I never do)
2 portion stock cubes made up with 850ml water
1 clove garlic, crushed
5 large basil leaves, roughly torn up
1 pinch salt
¼ teaspoon pepper
Method
Rinse lentils
Place all the ingredients less the seasoning and basil into a large pot.
Reduce heat and cook until the rice is done, about 30minutes.
Season to taste and stir through the basil then serve
mtiger 06-07-2008, 09:25 PM Just a couple of recipies that I have used on weight watchers which are low fat. Dont know if you have tried using noodles these work well with the lentil bolognese. Quorn is a good meat substitute that is low in fat too. Hope this helps.

here we go.
you need a squash
bag of spinach
an orange
1 small tin tomatoes
Large tsps of the following:
Cumin, turmeric, curry powder,
even tsps of:
Garlic salt, ground corriander, paprika, sugar(or sweetener)
a tiny drop olive oil
Dice up your squash into fairly even 1cm dice.
Put in a bowl and add a tiny bit of olive oil and a little of the Cumin, turmeric, curry powder.
Place on a baking tray and cook them in the oven for 20 mins on a moderate oven (gas 4/180c)
Place the rest of the spices in a pan and warm through VERY gently (if they burn it will turn sour)
Add the squash, juice of the orange and the tin of toms and sugar(sweetener).
Cook for about 5 mins then stir in half a bag of spinach.
Serve with rice.
