Greetings fellow foodies!

Welcome to the food group. The place for all food related chat on sheffield forum. Whether you need a quick recipe, some advice or share your wisdom or tips about something this is the place to do it.

I'm also going to try to organise interviews with local chefs who we feel are doing good things and post the interview for you to see whos keeping the restaurant scene busy and using local produce. I'll also try to prise a recipe or two out of them!

We're also going to try to encourage local food producers to tell you exactly how to get hold of them and encourage you to buy their product.

Overall, use the group well and productively and don't forget all the usual forum rules still apply so lets try to be nice and constructive to each other and then we can all reap the benefits

I was thinking how about some "sticky" threads for different categories of recipe, e.g one for meat dishes, one for desserts, one for veggie dishes etc?

Too many sticky threads means that new threads might not get looked at. However if the demand for it is there and it makes sense to merge very similar threads then we'll do that.

Yay, only just come across this forum -fab.

As for the cookies, here is a very simple all in method recipe for chocolate chip cookies - we do this in Y8 food so it is quite easy.

75g Soft margarine or butter
75g soft brown sugar
1 egg (medium)
half teaspoon vanilla essence
150g SR flour
50g Choc chips (or nuts, cherried what ever else you want to put in)

You basically put all the ingredients in a mixing bowl and beat with a wooden spoon until mixed.

It should be a fairly stiff but often slightly sticky dough - not runny

Divide into about 20 equal pieces of mini cookies or 12 for large ones. roll into rough balls, place on a greased baking try and flatten.

Bake 180 C gas 5 for about 15 - 20 mins.

Hello

I am a local food manufacture. I produce pickles and I am wanting to supply shops, restaurants and catering outlets.

My company is called Polydora's Pickles.

My pickles do not have any added salt, sugar or preservatives and you can see what the pickle is made of. Not the one colour fits all pickle of brown.

Do you know anybody that would be interested in purchasing my pickles?

What sort of things are you looking for lex? A lot of what we eat/cook these days is very far from traditional what with curries and chinese and thai etc.
Personally for traditional I rather like a good Hotpot.

Lamb chops or stewing lamb in cubes about 1 1/2 lbs
onion celery and leek, sliced
a couple of carrots sliced
a tablespoon of pearl barley [optional]
garlic, parsley salt and pepper
a couple of pounds of potatoes, sliced thinly
stock, veg or chicken.

a large casserole dish

saute the the onions, celery and garlic until soft.
fry off the lamb and add to the onion mix along with the carrot, pearl barley and leek.
top off with slices of potato, salting slightly each layer as you go
pour over the stock to just cover the potatoes.
dot with butter and put in the oven for about an hour. after this time check the potatoes are cooked, if they are then remove the lid and return to the oven for 20/30 mins until the potatoes have browned.

Sounds good, but it's not what I would call hotpot, as in Lancashire Hotpot. The lamb should be on the bone, the only vegetable should be onions and no need for stock, better use Worcestershire sauce which together with the lamb bones and potatoes and slow cooking give enough flavour.

Serve with pickled red cabbage to counter the greasiness of the lamb

Whats .... 75g
my scales only have 1/2 oz, 1oz etc. and there made of brass (you should try cleaning them)
