I have a really great recipe for a baby aubergine tagine that I'd like to make again. Last year a friend brought some baby aubergines up from her local Indian shop in Leicester for me but I was hoping there was somewhere nearer that stocked them.

I went to Waitrose yesterday and to a couple of shops on London Road but without luck.

Cheers

(ps yippeee...the food group is here! :D )

Come on then Taxman, what is the really great recipe?

Then you can tell us where to buy the baby aubergines from when you've found them :)

Its dead easy really. Heat oil and butter in a tagine or heavy casserole, stir in onions and garlic and saute until soft and they begin to colour. Add chillies, crushed and roasted corriander and cumin seeds, and a little sugar. When the seeds begin to give off an aroma toss in whole baby aubergines, coating them with the onion mixture. Tip in a tin of tomatoes. Cover and cook for 40 minutes until tender.

Just before serving add chopped mint and coriander leaves. Serve with couscous
