I had a great meal recently .I eat fish,but do not eat meat and I realy enjoyed it.It is so simple so I thought I would share the idea with you.

I had
Stuffed red peppers( stuffed with onions , mushrooms,courgettes and a small amount of chopped chilli)
Chop the peppers in half and place on a low light in the oven until really soft and juicy.
You can if you want to fry gently the mix for stuffing the peppers in a frying pan before hand .
Grate some breadcrumbs and cheese together and sprinkle this over the peppers
Place chunks of ordinary potatoes and chunks of sweet potatoes on a tray and pour some olive oil over them.
Place these in the oven at the same time and cook along with the peppers.

As there are meat eaters in our family,they either have some mince meat , or lamb cooked in the oven and I had quorn mince which cooks really quickly in the frying pan.
It is really a healthy meal and once it is in the oven , you dont have to do anything only sit back with a glass of wine and chill out!!

these are some nice burgers, I got the recipe from the moosewood cookbook...

lentil and walnut burgers.

soak and cook until tender, 1.5 cups of dry lentils

dice finely 0.25lb. fresh mushrooms
1 small green pepper
1 stalk celery
1 small carrot
2 cloves garlic
1 small onion
1 cup walnuts

saute everything except the lentils in butter, with a tsp salt, black pepper another tsp chilli powder,0.5 tsp dry mustard

combine this now with the lentils and 0.25 cup raw rolled oat flakes, mash moderately, dont totally squash up the veg chunks! add 5 tbs tomato paste, 2 ebaten eggs and a dash worcestershire sauce.

mix well and forem into large flat patties, chill for 1 hour then fry in butter or oil on both sides

This Delia number is one of the best veggie dishes I've had, It's even better if you make it, then leave it overnight in the fridge to combine before you bake it.

Those burgers sound good, might give that a go, trying to be very healthy at the moment so it's good they don't have cheese in them.

Not sure about Delia and her aubergines though - jury's still out on those chaps for me!

They sound really tastie, does anyone have any recipies for coeliac`s.

I will have to leave out the breadcrumbs and rolled oats though, and they probably make the difference do they?

i have recipes for coeliacs, i used to be a vegan so i was always after them...whats your favourite vegetable???

Favourite veg - has to be the pea, when they're in the shops, fresh in their pods I get through tons of them. You can't go far wrong with the humble spud of course.

i like doing veggie fajitas

mix as much onions, peppers, mushrooms etc. as you like. Then stir fry it, you could also use a seasoning if you wanted. And searve with salsa, gloucamole and tortila wraps. Very nice and not to bad for the waist line.

If I was a veggie I think I'd have to live on baked spuds beans and plenty of butter.

As much as I hate the thought of what happens before I tuck into my juicy half-pounder, I could never give them up and be a veggie.

Pardon my ignorance, but what's a vegan?

a vegan is someone who does not eat anything of animal origin at all...no milk, eggs, animal etc, also dont wear leather, suede

gazB - just because you arnt a veggie doesnt mean that you cant have any veggie meals at all and have to live on 100% meat - i know you probably dont but your posts are coming across that way. Am sure theres plenty of people on the forum who eat meat but might one to try something thats in this thread

Apologies if my posts come across like I'm the Ghost of Christmas Present in Scrooge, sat devouring hundreds of juicy chicken legs a day.. I don't! Infact potatoes are my favourite food! Chips, roast spuds, mashed spuds, jacket spuds.. Mmmmmmmmmm :D
