I am still learning about this and I have a question for all those in the know.

How do those that manage the team, make the decision who rides in which race.Is it down to looking at where the race is and if certain riders are better at hills etc, or is it just the better class of rider goes on the better races.

They have different riders for each type of race if the team is big enough.
You have "hard" riders who do the classics like Pari Rubiax and then other one day easier races like milan san rimo.
Then you have the "Tour" riders people who can ride day after day for two and three weeks.
Although some teams do have riders who do both of those,i.e.us postals George Hinckappie,and Ecimov,amongst others.

Watching the race yesterday and need help with this.

Listening to the commentary they said where they sit on the saddle makes a difference. How? and why? is the difference made.

if you sit right on the front of the saddle,it means your on the rivet,going all out.
On the hills its easier to sit at the back of the saddle and push through the pedals to get a good rythm going,good climbing is about being fluid on the cadence side..aka.Lance
