I love Lamb fat ,my wife yells at me every time we have Lamb and I am sucking the fat off her bones ( Lamb that is )
I remember as a kid in the 40s ,my grandmother making 'Braun, or Brawn ' not sure how it was spelled.
Over here in Canada we call it 'Head Cheese' and I think the main ingredient is Pigs cheek.
My Grandmother would make it with Sheep's head and would give me the bones to suck on.
That's how I developed a taste for Lamb's fat ( At least I think so )
My son is a strict vegetarian,when he was an infant we used to make our own baby food.
He often had Liver processed in the blender .
When I asked him what meat he missed the most he said " Liver"

I think there's some truth in what you're saying sweetdexter because I still more or less cook the same things Mam cooked. Then again we all have our personal taste too, Mam loved the fat on meat I never have. We all know it's not healthy anyway, I'm sneaky I trim the fat off before hubby gets his chops round it. :mrgreen:

i have made brawn from entire pigs head but didn't quite like the taste ,so now simple jellied pork hock does the trick(easy & cheap) they say you are what you eat so I guess I'm just a big jelly pig:hihi::hihi::hihi:
