... and knock off the price of a new one.
I've got a Golf mk3 and would take it to Gilders to get the new model. Does it work like that?
Before you take it into Gilders, try Barringtons just off the Dronfield bypass, and Hazeldens in Barnsley or Doncaster who are both IMO better dealers than Gilders.
Something like that, though you would get a better price selling it privately.
Also the price they offer you will depend on the price of the car you want to buy ie the dearer your new car the more they will give you for your old one.
Shop around though and don't buy from the first garage you go to. If you get a better deal at one than the next one tell them that you want them to match it at least and even push for extras to be thrown in.
Car sales is a dog eat dog business. I hate to say this but if you are female be firm and be prepared to stand your ground as you will probably be considered dumb and only concerned about the colour of the car. The times I have been to buy a car with my husband in tow for moral support and the car salesman has barely made eye contact with me even though unbeknown to him it was me with the cash.
will they take my old car though?

Yeah, they will offer p/x on a new one but as someone already said they may not offer you a good price.
I'd be very surprised if they even offered you as much as book price. You will get more private if you can be bothered with the hassle.
