I used to blend plain tofu with tomatoes and herbs (and other flavours too) a bit of his soya milk and cook in the oven or microwave and it puffed up like souffle. Last night i stir fried it like you lot said i used abit of oil and abit of soy sauce i used some chinese 5 spice and then added noodles! it was really nice! but different to how they cook it in restaurants and take aways, someone told me they get it pre fried and they should sell this in chinese shops so i went to the one on london road but they didnt have any. Many years ago, I worked with a Japanese bloke and in summer his wife would serve chilled tofu with the really hot horseradish paste and soy sauce. Washed down with chilled sake, truly great. Her way with seaweed crackers and green tea after a night's hard drinking was a less happy experience. Cut it into chunks and fry it gently so it doesn't break up and add it to whatever meateaters would normally add diced chicken to. She seemed happy with it anyway!!!
