I'm cooking a huge leg of lamb and theres no way we're going to be able to eat it all in one meal..
Is it ok to freeze meat again once it's been cooked ??
I've never been sure...:help: :help:

Yes you are fine to re-freeze once it has been cooked. Just never refreeze unfrozen raw or cooked meat.

There's enough for another 3 meals.. I just didn't want to think I had to go throwing it away...

It's important to cool cooked meat down as fast as possible if your going to freeze it, don't leave it standing about to cool naturally.

Also wastes electricity and could cause other food in the fridge to warm up - thus making them potentially dangerous to eat. So certainly a no no.

So I need to seal it up in a bag and cool it in the bowl with cold water and ice ??

Yes, I should have said to put it in a bowl of iced water, putting it in the fridge while still hot is a bad idea.

To be honest, many cooking guidelines are there to keep you well within a pampered safety margin.
Yes you can refreeze meat, freezing stops bacteria from multiplying, storing below slows the process.
Cooking any food above 86 degrees will actually kill most harmful food contanminating bacteria.
Cook your food properly and dont leave it lying around in undersirable conditions and you will not go far wrong.
Unless it is just me who likes their beef browner than red, and flavour in my meat.
