Off topic but to educate Mikey and D2J.

Blackberry Cheese Cake

Biscuite Base

150gm granita biscuits ( digestive)
50gm unsalted butter
25gm caster sugar.

Crush biscuits, blend with butter and sugar. Press into base of springform pan lined with baking paper. Set oven to180 deg c and bake for 10 min allow to cool.

Cake Filling

3 tbl spoons water
20g gelatine
3 eggs seperated
100g caster sugar
500g Philadelphia cream cheese
150 ml sour cream
50ml thickened cream
1 carton frozen blackberries

Put water in a bowl sprinkle gelatine on top. Microwave on med until desolved. Allow to cool but not set.
Put yokes and suger into mixing bowl and beat together. Add gelatine, blend in cream, sour cream and cheese.
Fold in blackberries.
Whisk egg whites untl stiff, fold into cream mixture. Spoon over biscuit base.
Refridgerate for 4 hours.

Topping
200ml thickened cream
3 tbl spoons cocoa
3 tbl spoons icing sugar

Whip cream until stiff, stir in cocoa and sugar. Pipe onto top of cake.
