You spend the day cleaning, re-stocking, etc. You then get a few hours break and then have to open up to the early hours, selling rich sods expensive drinks. With an ethical/slightly socialist stance. i.e. doing work for Housing Associations, self builders and the like on a discounted rate, whilst charging big bucks for those who can bloody well afford it!
