Does anybody have any idea's for quick easy meals? . . I just need some good idea's as Im always running short on time and never seem to have proper, decent meals anymore!!

It's always either pasta or sandwiches!! please help. ;)

microwave meals, you can get anything for the microwave!!!!

Stir fries - heat a little bit of oil in a pan and throw in lots of chopped veg / chicken / whatever and cook for about 5-6 mins and voila hot, tasty and good for you lunch :D

Alternatively on the days you do have time cook up HUGE batches of chilli / curry and freez it in portions :D

Buy A chicken fillet (or one for every person) and whack it in the oven when you get home, make a salad then go into the shower while the meat is cooking and by the time your hide is clean and dried it should be ready.

omlettes...quick, easy and very nutritious. Can be livened up with grated cheese, chopped onion, mushrooms, infact almost anything really.

I second stir fry. So easy to do and can add thnly sliced chicken or prawns for added flavour.

Spag Bol easy peasy. You can use a jar of sauce over some mince but I prefer to throw 500 grams of mince, tin Tomatoes, one good tablespoon of tomato puree, garlic, dried Basil, Oregano, rosemary and bay leaf in a saucepan and let the heat do the rest. Takes all of 30 mins and whilst thats cooking get the spag organised in another pan.

I've got a quick one - does involve pasta though!

fry an onion, add some natural yoghurt (or cream if you're that way inclined) skin a couple of tomatoes and add them. Meanwhile cook some spaghetti, at the last minute add a bit of smoked salmon to the sauce (and prawns if you like) - it's scrummy.

Other things we have that are quick:

Vegetable paella - short grain rice cooked in a tin (or half) of tomatoes and some veg (you can find a proper recipe easy enough on the web) - if you do it properly with chicken it takes a while - but with veg/prawns/chorizo sausage it's very quick.

Ratatouille crumble - very easy, a tin of ratatouille (cheating a bit I know, a tin of mixed beans (or you could use bacon or salami or something and it'd prob work) cover with a crumble of same proportions of breadcrumbs/oats/cheese and flour. (this crumble could go on virtually everything. Put it in the oven until it is heated through and the crumble looks crumbley!

• Any kind of Tortellini - full pack
• drop in boiling water with tons of frozen peas for about 5 minutes
• Stir in loads of chopped spinach for last 30 seconds
• drain and put back into pan
• stir in 1 big spoonful each of cream cheese and tomato puree
• serve with LOADS of black pepper

7-8 minutes maximum.. had it last night!

Pasta Bake.

One can of campbells condensed chicken soup, add 7 ml of semi skimmed milk to it and mix together.

Cook some pasta.

Chop up some bacon and mushrooms, microwave some peas and sweetcorn.

Mix everything together in an oven proof dish. Sprinkle some cheese or breadcrumbs on top and put in the oven for about 20 minutes.

Serve with french bread or garlic bread.
