Saying 'bless you' keeps them at bay. Saying 'Bless you' was to offer heavenly help to the sufferer. As an aside, the line from the nursery rhyme 'Ring-a-ring-a-rosies' : Atishoo, Atishoo, we all fall down also reflects on sneezing as a plague symptom. The other one is similar to what Hecate's said; that when you sneeze it's supposed to run the risk of your soul being expelled by the body. The Devil is always waiting around for the odd easy soul to pick up, and so if someone is blessed during this event the Devil's too scared to get the soul and the soul can return to you.
