I meant to post this a little while ago when Rubydazzler asked about it, but I completely forgot til now.
Anyway, the very best reference book I've come across for Knitters is Vogue Knitting - The Ultimate Knitting Book (http://www.amazon.co.uk/exec/obidos/ASIN/193154316X/qid=1146145106/sr=1-1/ref=sr_1_2_1/026-8555819-9190840). Although some of the book is aimed at a level beyond most beginners, it does have an excellent introductory section. This includes explanations and illustrations of the basics for left-handers.
If you're serious about knitting, then I highly recommend this book. For a beginner wanting the basics, try to find a copy in the library or bribe someone to get it for you as a gift. It's well worth it.
