Anyone know a good curry recipe,
my mate swears by this one.

(Iv'e tried it an its sound)


BEST BEEF CURRY EVER.


900g/2lb lean brazing steak (cut into 1"cubes
3tbls seasoned flour
5tbls sunflower oil
1 tsp ground cumin
1 tsp ground coriander
1/2 tspground ginger
1 tsp ground turmeric
1/4 tspground mace
2- 6 fresh chillies (depending on taste)
2 onions finely chopped
3 cloves of garlic
150 ml 1/4 pint rich beef stock (3 oxo cubes in 1/4 pint of water
2x400g chopped tomatos
salt & pepper
(Can also add some chopped mushrooms)


Coat the cubes of steak in the seasoned flour. Heat oil in a large frying pan. Sear the meat in batches, using a slotted spoon or spatula to transfer the meat to a plate.

Add the spices (use another tbls of oil if required) and stir over a moderate heat.Cook for 1 min, and then add onions,chillies ,and garlic.Stir in the meat and the stock, then the tomatos and season to taste.
Bring to the boil,then simmer, cover and cook for 1 to 1 an half hours stirring occasionally, until the meat is tender. Remove the lid for the final 1/2 hour to allow the sauce to reduce.

Serves four.

Serve with Basmati Rice.

1 an half cups of rice 3 cups of water add a little salt, put on heat till boilng, then simmer for ten mins with firm lid on pan then rice is perfect.

That sounds nice
I rather tend to use chicken more than anything, as the cooking time is less.
I do a top Madras & a Methi.
Why not lets invent a curry club & we can all share our own, alternatively, lets get together one night for a curryfest!

Ok, this is my way & a hint i got from someone that used to know the guy that works in the Kashmiri on Spital hill!

1. In a magimix, blitz your onion, garlic, ginger & chilli with a couple tbl spoons tamarind water!

2. When a puree develops, squeeze out through muslin or teacloth & retain liquid.

3. Collect your spices of choice, i use (greatest first), coriander seed, mustard seeds, cumin seeds, garam masala powder, cardamoms (inner little black seeds), turmeric & a couple of cloves!

4. Add veg oil in hot wok & crackle spices till poping!

5. Add squeezed onion, garlic, chilli mixture & fry on high heat stiring always!

6. Add chopped chicken breast & stirfry till sealed & coated with all other ingredients, also add a squirt of tomato puree!

7. Add the squeezed tamarind onion liquid & it should go ssshhhhh, yeh!

8. Reduce heat add handful of Kashuri Methi leaves, dried ones are tops!

9. Simmer for 15 mins, slowly adding a fiew drops of water till consistency is nice, reduced & descent sauce/meat ratio!

10. Add a good dollop natural yoghurt 5 mins before seving & add salt to taste!
