Anyone know a good curry recipe,
my mate swears by this one.
(Iv'e tried it an its sound)
BEST BEEF CURRY EVER.
900g/2lb lean brazing steak (cut into 1"cubes
3tbls seasoned flour
5tbls sunflower oil
1 tsp ground cumin
1 tsp ground coriander
1/2 tspground ginger
1 tsp ground turmeric
1/4 tspground mace
2- 6 fresh chillies (depending on taste)
2 onions finely chopped
3 cloves of garlic
150 ml 1/4 pint rich beef stock (3 oxo cubes in 1/4 pint of water
2x400g chopped tomatos
salt & pepper
(Can also add some chopped mushrooms)
Coat the cubes of steak in the seasoned flour. Heat oil in a large frying pan. Sear the meat in batches, using a slotted spoon or spatula to transfer the meat to a plate.
Add the spices (use another tbls of oil if required) and stir over a moderate heat.Cook for 1 min, and then add onions,chillies ,and garlic.Stir in the meat and the stock, then the tomatos and season to taste.
Bring to the boil,then simmer, cover and cook for 1 to 1 an half hours stirring occasionally, until the meat is tender. Remove the lid for the final 1/2 hour to allow the sauce to reduce.
Serves four.
Serve with Basmati Rice.
1 an half cups of rice 3 cups of water add a little salt, put on heat till boilng, then simmer for ten mins with firm lid on pan then rice is perfect.
